They say a picture can tell a thousand words... well I'll just leave this here with Ava's photo. If that doesn't scream drooling pleasure I don't know what does! 

I don'k make dog treats very often because of their very nature, treats. Treats should really only be given to your dog on the occasion and you have to be very careful with what ingredients you use as some won't agree with their tummies. Ava is on a high-quality dry food only diet and gets the occasional frozen bone for her teeth. So its safe to say she gets very excited when I bake her something yummy (a little while ago I shared a liver treat recipe and she want nuts for it! If you haven't made that yet its a must!).

We've officially hit the hot weather - and I'm not sure about you guys but a nice big salad is always the favourite in our household on a hot night. 

I'm not talking any boring salad either, I'm not a fan of a few salad leaves tossed with some cucumber and tomatoes with some meat, BORING! I like to get creative and use a whole bunch of flavours and textures to make it both filling and satisfying. We all know when you eat a boring dinner or lunch that isn't satisfying you instantly start thinking about naughty dessert. 

I whipped up this delish creation this week and it was so yummy we had it a couple of times! Also both times I wasn't raiding the cupboard afterwards looking for something sweet. 

The best part; it's cheap, easy to make and takes next to no time (the longest part was roasting up the sweet potatoes but an easy fix to roast in advance and keep in the fridge to throw together when you get home from work). 

Print this beauty and keep in the recipe file for an easy nutritious summer lunch/dinner:

Beef and vegetable flavour-packed salad 

Serves 2-4

INGREDIENTS 

1 tablespoon olive/coconut oil 

2 good quality beef steaks (I bought scotch fillets)

1 small sweet potato

Can baby beets, sliced in half 

Bag spinach leaves, washed 

Cherry tomatoes, sliced in half 

Cucumber, diced 

Red capsicum, cut into strips 

Handful nuts (I like almonds or pecans, lightly roasted in the oven when baking the sweet potato)

Handful dried berries (I like Cranberries or Inca berries)

Dressing: 

Olive oil

Dijon mustard

Flax seed oil

Pepper 

METHOD

It's all pretty self explanatory here so not much of a method.  The biggest thing to prepare is the sweet potato and I like to do this in advance so its all ready to go in the fridge to make it up fresh. 

Pop all salad ingredients on individual plates/bowls (spinach, cucumber, capsicum, beetroot, sweet potato, nuts and berries).

Heat the oil in a frying pan and cook steak to your liking. Allow to sit before slicing up into bite sized pieces. Top salad with beef pieces.

For the dressing you'll notice I haven't put quantities down, thats because I play round with it each time. In a small bowl start with a good drizzling of olive oil and add a couple of teaspoons of the mustard. Then add the flax oil (if using) and season with pepper. Mix well. Drizzle over salad.

Who doesn't like a slice of a delicious warm banana bread to start their day?!

This recipe is by far my most sought after recipe since first publishing it years ago on another blog I used to run, and people still tell me its one of their go-to breakfasts. And the best bit, its super simple and easy to make!

I make up a loaf at the start of the week, slice it up and warm a slice for breakfast and serve it with a creamy yogurt and berries... mmmm.  I also freeze individual slices in the freezer for an easy breakfast, that way you don’t have to eat it all up before it goes stale.

So get those bananas ripening, you'll need only a couple and a few other basic ingredients and you're on your way to banana bread heaven.

I love a yummy pizza just as much as the next person. But I don't enjoy the sluggish, bloated and heavy feeling that usually follows (from the flour base and cheese etc). So with A LOT of trial and error and playing around with different consistencies I'm pretty proud of this little winner. The base is made of cauliflower, yep that white vegetable you probably only steam/bake and use it as a side dish! There's soo many other wicked things to do with cauliflower and this is one of them!

Starting your day up with a high-fibre high protein breakfast - I think -  sets you up for a great food day ahead. Why? because fibre gets your digestion going to rid your body of any toxins, waste etc and the protein keeps you fuller for longer meaning it may sustain you until lunch (or in my case a lighter snack mid-morning, I can never make it to lunch without a snack first).

This recipe takes next to no time to prepare and make a great refreshing healthy Spring/Summer weeknight dinner. They’re high in protein, low in fat and carbs, winner. 

I bought the pre rolled kangaroo meatballs (Macro brand from Coles) but you can easily roll up your own with your favourite mince (chicken, beef, turkey etc). 

Use leftovers for an easy lunch or future dinner.

No matter how much we educate ourselves these days around the impact sugar has on our bodies, it sure doesn’t make those cravings disappear; if anything it makes them worse!

And while those sugar-free ‘tastes just like the real thing’ desserts that flood our Pintrest boards promises to be the healthier option, its way too easy to indulge in too many of them and you end up eating, if not more, the same amount of calories you would have in an actual sugar laden chocolate bar!

My little four legged man Harry is the biggest fan of my cooking and baking… and he’s never even tasted a bite.

Every night he sits on the kitchen floor and watches my every move while I cook my meal, test out a new healthy treat recipe or prepare my food for the next day. He very rarely begs for me to share it with him, instead he patiently waits for his own standard tinned meat and dry dog food to be served in his bowl.

Over the years I have fallen in love with the cuisine but not so much with the thousands of calories that come with it. So like most things I have adapted a healthy version of the good old favourite nachos - seriously these are to die for and in my opinion even better than the original fat-laden ones.
