Who doesn't like a slice of a delicious warm banana bread to start their day?!
This recipe is by far my most sought after recipe since first publishing it years ago on another blog I used to run, and people still tell me its one of their go-to breakfasts. And the best bit, its super simple and easy to make!
I make up a loaf at the start of the week, slice it up and warm a slice for breakfast and serve it with a creamy yogurt and berries... mmmm. I also freeze individual slices in the freezer for an easy breakfast, that way you don’t have to eat it all up before it goes stale.
So get those bananas ripening, you'll need only a couple and a few other basic ingredients and you're on your way to banana bread heaven.
WARM BREAKFAST BANANA BREAD
60g rolled oats
1 1/2 cups self raising wholemeal flour (or coconut flour to make it gluten free)
1 teaspoon baking powder
70g raw sugar (or sometimes I'll use a couple of teaspoons stevia)
1 1/2 bananas, mashed
75g nuttalex (or chosen margarine), melted
1 1/2 cups almond milk (or chosen milk)
1 teaspoon maple syrup
1/2 teaspoon mixed spice (or cinnamon or spice of choice)
Pre-heat oven to 180 degrees. Spray and line a loaf tin with non-stick baking paper.
Combine oats, flour, baking powder, spices and sugar in a large bowl. In another bowl mix mashed bananas with nuttalex, milk and maple syrup until combined. Combine wet ingredients with dry ingredients.
Spoon mixture into lined pan and smooth the top to insure its evenly spread (in the corners).
Bake for 40-45 minutes or until a skewer inserted into centre comes out clean. Leave in tin for 10 minutes before transferring to a wire rack to cool.
Cut bread into 8 slices and serve warm with a dollop of greek yogurt and walnuts or some berries.
